Whats the difference between Mexican and Puerto Rican food?
Q. Im just wondering is there any difference between Mexican and Puerto Rican food? Everytime I see a Latino restaurant it always says Mexican but never Puerto Rican or anything else. So is there a real difference in the food or do they just always call it Mexican as a catch-all term for hispanic food?

A. Thats like asking whats the difference between Italian food and Japanese food, a whole lot. For starters, Mexican cuisine is founded in the use of corn. Puerto Rican food implements more rice and beans. In Mexico depending what region you are in there are a wide variety of dishes and products that are used that are indigenous to each area. In the U.S. generally speaking, places that serve Mexican food has very little to do with real Mexican cuisine and is usually adapted to the taste of American palates, greasy, cheese filled replicas of misinterpreted dishes from the south. I speak of this with knowledge being an American chef who lives and works in Mexico and have also traveled to Puerto Rico.

Q. Something really easy; I don't like to cook and I don't want to run off to the grocery store on a wild goose chase for some weird ingredients I have never heard of. What are some easy Puerto Rican recipes, maybe using plantain or dessert recipes. I would really appreciate it. A. glad to see you appreciating the boricua food you can hit me up anytime. i'm working now on opening my own retaurant. as far as easy goes, the recipies are easy but they do require certain things to make them right. for tostones ( fried banana chips) some bananas some flour cooking oil take the bananas and mash them up make some patties out of them( usually no bigger than the palm of your hand so they won't break and try to make them consistently the same size to make the cooking process easy) pad them on both sides with flour and fry them until they're just brown place them in a bowl lined with paper towel to absorb excess oil and enjoy if you really want to make something, make arroz con gandules ( puerto rican rice)

First of all, if you are refering to the rice with something in it you may want to call it arroz with whatever is it that you want in it like beans, pigeon peas, corn, salchicha (spanish sausage), etc...sofrito is a blend of red and green peppers, garlic, onions, cilantro and culantro too (both are green leaf) i add also some white vinegar, water, salt and chicken bouillon and taste as you go along. If you want to make, lets say rice and beans for about 4 people. Rinse 2 cups of white rice until the water is not so white anymore. Then in a pot (you know, you can always buy our aluminum pan as known as caldero which is the one that we make rice) you add about 3 tbsp on oil (i prefer canola because is healthier) then add about 2 tbsp of… [cont.]
